Quebec City professor hopes to promote edible insect farming

From June 12 to 16, Quebec City hosted the 4th International Conference “Insects to Feed the World” where a Laval University professor is working to position edible insect farming as a full-fledged animal production that can even help manage organic waste, rather than seeing bugs as enemies of the agri-food system. The breeding of the edible insects will feed on food scraps, where they will produce proteins and fats of very high quality that humans can then eat.
