Cookie manufacturer uses upcycled ingredients and keeps unsellable cookies out of landfills

Fancypants Baking Co., a natural cookie manufacturer, is embracing upcycled ingredients and presenting products with minimal waste and packaging by using nutritious byproducts like okara (a by-product from tofu and soy drink production) as well as waste coffee cherry pulp to create a line of sustainable cookies. The company is also a founding member of the Farm Powered Sustainability Heroes (FPSH) program, through which food and beverage makers collaborate to reduce waste and be sustainable. Rather than sending broken cookies to landfills, Fancypants Baking Co. sends the product to be converted into energy and by-products using anaerobic digesters.
