Ice creamery reduces waste by upcycling unwanted food

Salt & Straw, a Portland-based ice cream maker, is upcycling food that would otherwise end up in landfills  to make unique and creative flavours of ice cream. Flavours include Lemon Curd & Whey made from tonic beverage, bread-based Day-Old Bread Pudding & Chocolate Ganache, and Malted Chocolate Barley Milk made from upcycled beer barley.
